Ingredients
- 1 cup brown basmati rice
- 1/2 cup sultanas
- 1/2 cup peanuts toasted
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 tsp extra-virgin olive oil
- 1 diced red onion
- 1 cucumber peeled and finely chopped
- 1 red bell pepper de-seeded and finely chopped
- 1 apple of your choice cored and chopped with the skin left on
- 1 tbsp Red pepper flakes
- 2 stalk celery trimmed, finely chopped
- 1 tbsp lemon juice

Instructions
- In a medium saucepan, bring 2 1/2 cups water to a boil. Add 1/2 tsp. salt and the rice. Turn heat to low, cover, and simmer 30 minutes. Remove from heat and let sit 5 minutes. Uncover and fluff with a fork.
- In a separate bowl, combine raisins, black pepper, olive oil, onions, cucumber, red pepper, apple celery red pepper flakes & lemon juice
- Add mixture to rice and mix
- To serve, combine rice mixture with vinaigrette and garnish with peanuts
