BROWN RICE SALAD

BROWN RICE SALAD
Prep Time 15 minutes
Cook Time 30 minutes

Ingredients
  • 1 cup brown basmati rice
  • 1/2 cup sultanas
  • 1/2 cup peanuts toasted
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp extra-virgin olive oil
  • 1 diced red onion
  • 1 cucumber peeled and finely chopped
  • 1 red bell pepper de-seeded and finely chopped
  • 1 apple of your choice cored and chopped with the skin left on
  • 1 tbsp Red pepper flakes
  • 2 stalk celery trimmed, finely chopped
  • 1 tbsp lemon juice
Prep Time 15 minutes
Cook Time 30 minutes

  • 1 cup brown basmati rice
  • 1/2 cup sultanas
  • 1/2 cup peanuts toasted
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp extra-virgin olive oil

  • 1 cucumber peeled and finely chopped
  • 1 red bell pepper de-seeded and finely chopped
  • 1 apple of your choice cored and chopped with the skin left on
  • 1 tbsp Red pepper flakes
  • 2 stalk celery trimmed, finely chopped
  • 1 tbsp lemon juice
Instructions
  1. In a medium saucepan, bring 2 1/2 cups water to a boil. Add 1/2 tsp. salt and the rice. Turn heat to low, cover, and simmer 30 minutes. Remove from heat and let sit 5 minutes. Uncover and fluff with a fork.
  2. In a separate bowl, combine raisins, black pepper, olive oil, onions, cucumber, red pepper, apple celery red pepper flakes & lemon juice
  3. Add mixture to rice and mix
  4. To serve, combine rice mixture with vinaigrette and garnish with peanuts
Recipe Notes

Best served with: Barbecued sausages, beef steak or barbecued chicken.
